Healthy Turkey Meatball Recipe

- 2 lb2 lb2 lb Ground Turkey

- 2 whole2 whole2 whole Eggs
- 0.5 cup0.5 cup0.5 cup Gluten-Free Italian Bread Crumbs

- 0.5 cup0.5 cup0.5 cup Parsley

- 0.5 cup0.5 cup0.5 cup Parmesan Cheese

- 3 cloves3 cloves3 cloves Garlic

- 1 tsp1 tsp1 tsp Oregano, Ground - The Spice Lab

- 0.5 tsp0.5 tsp0.5 tsp Black Pepper - Primal Palate

- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil

- 1 tsp1 tsp1 tsp Salt

- 800 ml800 ml800 ml Tomato Passata (Uncooked Tomato Puree), FOR SAUCE
- 400 ml400 ml400 ml Water, FOR SAUCE
- 1 whole1 whole1 whole Onion, FOR SAUCE

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a bowl, add your ground turkey, eggs, bread crumbs, parsley, parmesan, garlic, oil and seasonings.
- Mix until just incorparated.
- DO NOT OVERMIX.
- Roll into bite size balls.
- Place on a baking sheet and into the fridge for a minimum of 30 mins - 8 hours.
- In a pot, add your cooking oil, then place meatballs in.
- Brown meatballs on each side for about 2 mins.
- Remove meatballs, then in the same oil, add your onions, garlic and seasonings.
- Saute for 2 mins.
- Add your passatta or crushed tomatoes.
- In the sauce can fill halfway with filtered water and pour into sauce.
- Optionally you can transfer to a blender, or use an emulsifier to smoothen sauce.
- Add spices of choice, salt to taste and a cheese rind for full flavour.
- Place partial cooked meatballs in sauce and simmer for 30-45 mins.
- Once meatballs are done, eat as an appetizer or on a bed of your favourite pasta.
