Healthy White Chicken Chili
Winter is in full swing, and I know we're all looking for some cozy comfort food! This Healthy White Chicken Chili is full of flavor, protein, and warming spices to leave you feeling amazing from the inside out. Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Olive Oil
- 111 Yellow Onion, diced
- 111 Poblano Pepper, diced
- 1 - 21 - 21 - 2 Jalapeño, diced (based on preferred level of spice)
- 1.5 lb1.5 lb1.5 lb Chicken Thighs, Boneless and Skinless
- 0.5 cup0.5 cup0.5 cup Cilantro, chopped
- 6 cups6 cups6 cups Chicken Broth
- 1 cup1 cup1 cup Frozen Corn
- 15.5 oz15.5 oz15.5 oz Cannellini Beans (canned), 1 can, drained and rinsed
- 15.5 oz15.5 oz15.5 oz Chickpeas, 1 can
- 4 Tbsp4 Tbsp4 Tbsp Lime Juice, 2 large limes
- 1 Tbsp1 Tbsp1 Tbsp Cumin, Ground
- 2 tsp2 tsp2 tsp Chili Powder
- 1 tsp1 tsp1 tsp Coriander, Ground
- 1 pinch1 pinch1 pinch Salt and Pepper, to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add olive oil to a large pot or dutch oven over medium heat. Add onion, pasilla peppers and jalapeños and cook for a few minutes, until veggies begin to soften.
- Add dry spices, and cook for an additional couple of minutes.
- Add in chicken broth, raw chicken thighs and beans. Simmer for 25-30 minutes, then remove chicken, and shred with 2 forks.
- Add the chicken back in, along with lime juice, corn and cilantro.
- Meanwhile, add chickpeas (with the liquid) and 1/2 cup of water to a high speed blender or food processor. Blend until smooth, then add mixture into the pot. Mix to combine.
- Simmer on low for 10 minutes. Adjust seasonings to taste, and add more salt if needed.
- Serve with tortilla strips, avocado, cilantro and a squeeze of lime, if desired. Enjoy!
