Herb Roasted Sliced Sweet and Russet Potatoes
Thick sliced russet and sweet potatoes are seasoned with fresh herbs and roasted in the oven to perfection for an easy side dish!
Ingredients
- 1.5 lb1.5 lb1.5 lb Sweet Potato
- 1.5 lb1.5 lb1.5 lb Potatoes, Russet
- .25 cup.25 cup.25 cup Olive Oil
- 2 Tbsp2 Tbsp2 Tbsp Thyme, Fresh, chopped
- 2 Tbsp2 Tbsp2 Tbsp Sage, chopped
- 1 tsp1 tsp1 tsp Kosher Salt
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 400˚ and line two sheet pans with parchment paper.
- Wash potatoes and cut off the ends. Slice potatoes in 1" thick slices.
- In a large bowl, add potato slices, olive oil, fresh herbs, and salt. Toss to combine until all of the slices are evenly coated with olive oil and seasonings.
- Place seasoned potato slices evenly spaced on the prepared sheet pans in a single layer.
- Roast potato slices in the preheated oven for 30 minutes, rotating the sheet pans between oven racks halfway through for even cooking. Potatoes should be lightly crispy and fork tender.
