Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350 degrees F.
  2. In a food processor, add onion, mushrooms, zucchini, and carrot. Process until chopped finely.
  3. Heat avocado oil in large skillet over medium high heat, and add chopped vegetables and ground beef. Cook stirring for 5 minutes until the meat is browned, then stir in taco seasoning.
  4. Add corn, salsa, and 1 cup of cheese. Stir until the cheese is melty. Remove from heat.
  5. Add 2 cups of tortilla chips to the bottom of a 9x13 baking dish.
  6. Evenly top with the beef and veggie mixture.
  7. Top with the remaining 1 cup of tortilla chips, and sprinkle with the remaining 1 cup of cheese.
  8. Bake for 15-20 minutes until the cheese is melty.
  9. Serve warm. You can top with optional toppings like avocado, cilantro, sour cream, lettuce, tomatoes, jalapeño slices, hot sauce, and more.

Notes

Leftovers will keep in the fridge in an airtight container for up to 3 days. Reheat in the oven or the microwave.
