High-Protein Cookie Dough Bars
These high-protein cookie dough bars will be the easiest and tastiest snack you'll make. They come together in just 10 minutes, are no-bake and can be stored in the freezer! There's really nothing like the flavour combination of peanut butter and chocolate, and these bars are truly mouth watering!

Ingredients
For the Cookie Dough Layer
- 1.25 cups1.25 cups1.25 cups Almond Flour

- 40 grams40 grams40 grams Vegan Protein Powder, Good Protein Vanilla protein powder

- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup
- 0.333 cup0.333 cup0.333 cup Coconut Oil, melted
- 0.5 cup0.5 cup0.5 cup Peanut Butter

- 0.5 cup0.5 cup0.5 cup Semi-Sweet Chocolate Chips

For the Chocolate Layer
- 0.75 cup0.75 cup0.75 cup Semi-Sweet Chocolate Chips

- 1 tsp1 tsp1 tsp Coconut Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Line a rectangular pan with parchment paper and set aside.
- To a bowl, combine almond flour, protein powder, maple syrup, melted coconut oil, and peanut butter and mix until well combined. Fold in chocolate chips.
- Add cookie dough layer to the lined pan and place in the freezer to set.
- To a small bowl, make the chocolate layer by melting the chocolate chips and coconut oil in the microwave in 25-30 second increments, stirring in between until fully melted.
- Remove cookie dough from the freezer, then pour over melted chocolate. Place back in the freezer to set for about 20-30 minutes.
- Cut into squares and enjoy.
Notes
How to store: place in an airtight container in the freezer for up to 2 weeks.
