Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat air fryer - Set to 375°F for 2–3 minutes (if your air fryer preheats).
- Warm a pan, add a drizzle of oil.
- Add your ground meat and fajita seasoning, salt, & pepper.
- Cook until meat is cooked through.
- Warm another small pot to make the beans in.
- Drizzle a little oil, add some of your chopped onions, fajita seasoning, garlic, salt, & pepper.
- I usually add a little bit of water to make it creamier and makes it easier to spread.
- While the beans and meat are cooking you can begin to crisp your tortillas.
- Spray one tortilla lightly with oil (optional but helps crisp).
- Air fry 375°F for 2–3 minutes, until lightly crisp.
- Remove and set aside.
- Build the first layer: Spread your beans, top with meat mixture.
- Add second layer of the crispy tortilla.
- Top with veggies and cheese
- Air fry to melt + crisp at 375°F for 3–5 minutes until the cheese is melted and edges are crisp.
- Keep an eye on it the last minute—air fryers vary.
- Let it sit 1 minute, then slice like a pizza and enjoy!
Notes
Quick pro tips If your top tortilla starts lifting, place a small air fryer-safe rack on top for the last 2 minutes (or secure with toothpicks). Want it extra crispy? Crisp both tortillas first for 1–2 minutes each before assembling. Top with sour cream or greek yogurt or even shredded lettuce. Watching your Carbs? If you are watching your carbs, you could do all of this on a single layer: start with the beans, meat mixture, red enchilada sauce, then toppings, and cheese. I used the rise & puff tortillas and they cooked perfectly and got that extra crisp I always want with Mexican Pizzas!
