Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your waffle maker (a Dash mini waffle maker works perfectly).
  2. Mix the egg, mozzarella, and seasoning in a small bowl until well combined.
  3. Cook the chaffle batter in the waffle maker for 2-3 minutes until golden and crisp.
  4. Top with pepperoni, bell pepper, cheddar cheese (and marinara if using).
  5. Cook again for 2-3 minutes, until the cheese is bubbly and toppings are set.
  6. Sprinkle with fresh herbs if desired, then serve hot.

Notes

Use pre-shredded mozzarella cheese (the drier, low-moisture kind). Fresh mozzarella will release too much liquid and make your chaffle soggy. Always preheat your waffle maker to help your chaffle cook evenly and crisp up properly. Don’t overload with toppings – too much can make the base soft instead of crispy. To meal prep, cook plain chaffles and store in the fridge for 2–3 days. Reheat and top with fresh ingredients before serving.
