Keto Protein Chocolate Coconut Truffles
These little bites are basically dessert with benefits. Think fudge-meets-coconut-macaron but made with clean ingredients, no added sugar, and a protein boost. Keep 'em in the fridge or freezer for those “just need a bite” moments.
Ingredients
- 0.5 cup0.5 cup0.5 cup Coconut, Shredded
- .5 cup.5 cup.5 cup Almond Flour
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Chocolate Protein Powder - Nuzest
- 2 Tbsp2 Tbsp2 Tbsp Cacao Powder, Raw
- 3 Tbsp3 Tbsp3 Tbsp Power Fuel Nut & Seed Butter - NuttZo
- 3 Tbsp3 Tbsp3 Tbsp Coconut Oil
- 1 Tbsp1 Tbsp1 Tbsp Monk Fruit Sweetener, optional
- .5 tsp.5 tsp.5 tsp Vanilla Extract
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a bowl, mix together coconut, almond flour, protein powder, cocoa powder
- Stir in melted coconut oil, nut butter, sweetener, and vanilla. Mix until a sticky dough forms. If it’s too dry, add a splash of almond milk.
- Scoop into small balls and roll into 1 inch balls
- Chill in the fridge or freezer for 15–30 minutes to set.
- Optional: Roll in extra shredded coconut or drizzle with melted sugar-free chocolate.
Notes
