These little bites are basically dessert with benefits. Think fudge-meets-coconut-macaron but made with clean ingredients, no added sugar, and a protein boost. Keep 'em in the fridge or freezer for those “just need a bite” moments.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a bowl, mix together coconut, almond flour, protein powder, cocoa powder
  2. Stir in melted coconut oil, nut butter, sweetener, and vanilla. Mix until a sticky dough forms. If it’s too dry, add a splash of almond milk.
  3. Scoop into small balls and roll into 1 inch balls
  4. Chill in the fridge or freezer for 15–30 minutes to set.
  5. Optional: Roll in extra shredded coconut or drizzle with melted sugar-free chocolate.

Notes

Keep them stored in the fridge for up to a week — if they last that long
