loaded broccoli salad
this isn't your average salad 🥦🥓🍎
it's loaded — with cruciferous veggies, crispy roasted apples, crunchy nuts & seeds, sweet chewy dates, & crispy bacon… all tossed in my easy-peasy greek yogurt "honey" mustard dressing.
gluten-free, fiber-filled, & perfect for a cookout side or meal prep win.
Ingredients
- 2 lb2 lb2 lb Broccoli, cut into florets, I used a blend of broccoli & cauliflower

- 1 - 21 - 21 - 2 Apples, Honeycrisp, diced
- 6 - 86 - 86 - 8 easy baked bacon (click for recipe)
- 0.5 cup0.5 cup0.5 cup Pumpkin Seeds, or nut/seed of choice

- 0.5 cup0.5 cup0.5 cup Medjool Dates, chopped, or dried fruit of choice
- 0.5 cup0.5 cup0.5 cup greek yogurt "honey" mustard (click for recipe)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 400.
- toss veggies & apple with a little avocado oil, salt, & pepper, then place on a sheet pan & bake for 25-30 minutes.
- allow veggies to cool completely, then add to a bowl.
- add bacon, seeds, & fruit to veggies.
- in a separate bowl, whisk together dressing.
- pour dressing onto salad mixture & combine well.
- refrigerate for at least 30 minutes before serving.
