Magic Green Cookies
Did you know if you mix sunbutter and baking soda, it will turn the inside of your cookies green while baking?
I had a request to make these dye free cookies and they came out so good! These would be a fun St. Paddy’s Day treat!
Why does this happen? Well, when the chlorophyl from the sunflower seeds mixes with baking soda when baked, it turns the cookies GREEN! No dye needed for these fun cookies!
Ingredients
- 3 Tbsp3 Tbsp3 Tbsp Golden Monkfruit Sweetener - Lakanto, or 1/4 cup brown sugar
- 0.25 tsp0.25 tsp0.25 tsp Sea Salt
- 0.333 cup0.333 cup0.333 cup Oat Flour
- 2 Tbsp2 Tbsp2 Tbsp Coconut Flour
- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 0.5 cup0.5 cup0.5 cup Sunbutter
- 0.25 cup0.25 cup0.25 cup unsweetened Applesauce
- 2 Tbsp2 Tbsp2 Tbsp Milk, dairy free or regular
- 0.5 tsp0.5 tsp0.5 tsp Pure Vanilla Extract
- 0.25 cup0.25 cup0.25 cup Dark Chocolate Chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix dry ingredients in a bowl and then add the wet ingredients and combine. Fold in chocolate chips.
- Scoop onto a parchment lined baking sheet and slightly flatten the top of the cookie.
- Bake at 350 for 10-12 min. Let cool for at least 10 minutes to firm up.
- The longer you wait, the more green the insides will be!
