Sunbutter Cookies (Gluten Free, Paleo) (Edit recipe)

These paleo sunbutter cookies taste just like a peanut butter cookie, but are completely nut free! They're made with sunflower seed butter, sweetened with coconut sugar and topped with flaked salt. Furthermore, this recipe is paleo, gluten free, dairy free and nut free.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350 degrees F.  Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, combine sunbutter, egg, coconut oil, vanilla and coconut sugar.  Whisk thoroughly using a fork.
  3. Mix in baking soda.
  4. Scoop the cookie dough onto the lined baking sheet.  Each cookie should be about one rounded tablespoon in size.
  5. Place the cookies in the oven and bake at 350 degrees for 10 minutes.
  6. After baking, remove the cookies from the oven and sprinkle a little flaked sea salt on each one. 
  7. Let the cookies cool on the baking pan for 10 minutes before removing.  Then transfer them to a wire cooling rack.
  8. Storage: keep cookies in an airtight container or baggie in the fridge or freezer.

Notes

The dough can get quite oily - don't fret!  It works and bakes into beautiful cookies.
