Mama’s Brunch Bake
Something my mom always makes for brunch is this egg bake. It’s packed with protein and is highly addictive. This is my slightly modified variation!
Ingredients
- 12 oz12 oz12 oz Bacon
- 111 Yellow Onion, small dice
- 1 cup1 cup1 cup Broccoli, chopped
- 3 cups3 cups3 cups Potatoes, Russet, shredded
- 101010 Eggs
- 2 cups2 cups2 cups Cottage Cheese
- 16 oz16 oz16 oz Colby Jack Cheese, shredded, divided into 12oz and 4 oz
- 2 tsp2 tsp2 tsp Kosher Salt
- 1 tsp1 tsp1 tsp Black Pepper
- 1 tsp1 tsp1 tsp Garlic Powder
- 1 tsp1 tsp1 tsp Onion Powder
- 1 tsp1 tsp1 tsp Smoked Paprika

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 375F. Cook the bacon in a large skillet over medium heat until crispy, and remove to cool off.
- Once cooled, chop into small to medium sized bits and reserve.
- In the rendered fat, saute the yellow onion with some of the kosher salt and black pepper. Keep the burner on low.
- In a large bowl, whisk together the eggs, cottage cheese, and 12 oz of the colby jack cheese.
- Add half of the onion powder, garlic powder, and paprika, as well as some of the salt and pepper, and reserve.
- Add the broccoli and potatoes into the skillet with the onions to saute and cook down a bit with the remaining seasonings.
- *If using the same skillet to bake, turn off the heat and pour the egg and cheese mixture into the skillet. Combine everything until homogenous. If transferring, do just that and add everything together in a greased casserole dish.
- Top with the remaining cheese and bacon bits, and bake at 375F for 50-60 minutes.
- The top should be golden, and the potatoes fully cooked through.
- Allow to cool for a few minutes before slicing and serving.
Notes
*You can cook and bake everything in a large cast iron skillet with tall sides, or prep everything and transfer to a casserole dish to bake.
