Mango Lilikoi (passion fruit) Curd
The tropical, tangy, beach-y infused, summer vibin' kissing cousin of my Sun-kissed Lemon Curd that will have you dreaming of sinking your toes in the sand and listening to the waves!
Ingredients
- 6 whole6 whole6 whole Egg Yolk, reserve whites for another use
- .5 cup.5 cup.5 cup Honey - Shannon Farms
- .25 cup.25 cup.25 cup Champagne Mango, pureed, typically about 1 champagne mango
- .25 cup.25 cup.25 cup Passion Fruit, pulp, typically 2-3 ripe passion fruit
- .5 tsp.5 tsp.5 tsp Vanilla Baking SALT - am.Niccoli, can sub standard salt as needed
- .25 cup.25 cup.25 cup Butter, Salted, can sub ghee or dairy free butter as needed
- 1 whole1 whole1 whole Lime Juice, juice of 1 lime

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Press egg yolks through a fine mesh sieve* into a 3 qt saucepan.
- To make mango puree, add mango pieces to a narrow bottle or mason jar. Whirl away with an immersion blender until very smooth. For the passion fruit, cut them open and scoop out the pulp. Add both mixtures into the saucepan with egg yolks, then add honey and salt, whisk well to combine.
- Over medium heat, cook and stir continually until just starting to boil and thicken, you should see "fat" bubbles when it's ready. Remove from heat and pour into a 4 cup measuring cup or heat proof bowl. Add butter and lime juice then whisk until melted and fully combined. Pour into an airtight container and allow to cool.
- You should get approximately 2 cups. Store in refrigerator and enjoy in all sorts of creative ways. Use within a week to 10 days for optimal texture and taste.
Notes
Normally you pour the hot curd through a fine mesh sieve after it's cooked to eliminate any errant stringy egg parts and lumps. If you do that with this curd you will also eliminate all the cute passion fruit seeds that add so much character to this curd. So, press those egg yolks through that sieve before you cook it!
