Mango Margarita Rice Krispies
We all love these gooey, sticky, rice krispy snacks. I remember my mom sending them in my school lunches and was always so excited to see them. I thought giving them a tasty mango flavor twist would be so fun and I was NOT wrong! I used the Craftmix Mango Margarita cocktail powder and it was so tasty! I also tossed in some freeze dried mango bits for some added texture too. On a recent taco party meal, everyone enjoyed these so much! For an extra kick, try sprinkling some Tajin on them before serving...next level YUM!
Ingredients
- 3 Tbsp3 Tbsp3 Tbsp Butter, Salted, can sub ghee
- 10 oz10 oz10 oz Mini Marshmallows, use your favorite variety
- 3 whole3 whole3 whole Mango Margarita - Craftmix, packets, or Craftmix of choice
- 1 tsp1 tsp1 tsp Vanilla Extract
- 1 pinch1 pinch1 pinch Vanilla Baking SALT - am.Niccoli, can sub standard salt
- 6 cups6 cups6 cups Rice Krispies Cereal, I like to use an organic brand
- 1 whole1 whole1 whole Freeze-Dried Mango Crispy Fruit - Crispy Green, 18g bag, roughly chopped

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Prepare an 8"x8" inch baking pan by coating with butter or a little spritz of avocado oil, set aside.
- In a medium sized saucepan, add butter and melt over medium low heat.
- Once butter is melted add marshmallows and melt slowly over medium low heat, stirring constantly to avoid any browning on the bottom of the pan. Once marshmallows are nearly melted, sprinkle contents of Craftmix Mango Margarita mix evenly as well as the vanilla, continue stirring to combine and finish melting marshmallows.
- Add cereal one half at a time to ensure even distribution of the marshmallow mixture. When you add the second half of the marshmallow, if you're going to use the freeze dried mango, toss those in as well. Stir to fully combine.
- Transfer mixture to prepared pan and press down slightly with a spatula or buttered fingers/palms to fill the pan. I try not to press down to tightly since I like my Rice Krispie treats to have some "give" to them.
