Mango Popsicles (With Hidden Cauliflower)
Both kids and adults love these delicious and creamy mango popsicles, with hidden cauliflower that you can't detect at all. It's the perfect summer treat, and a yummy way to sneak in veggies for picky eaters. You can use packaged frozen cauliflower rice, which are partially cooked already, or steam your own. The texture and flavor are just wonderful with minimal ingredients!
Ingredients
- 2 whole2 whole2 whole Mango, ripe, not mushy
- 1.5 cup1.5 cup1.5 cup Riced Cauliflower, packaged frozen, or steamed cauliflower florets
- 0.5 cup0.5 cup0.5 cup Heavy Cream (Whipping Cream), or full-fat coconut milk, plus more if needed
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Pure Maple Syrup, or your favorite sweetener - OPTIONAL

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Peel and cut the mango into chunks. Add to a high speed blender with cauliflower rice and heavy cream.
- Blend until thick and creamy. Add more heavy cream 1 tbsp at a time if the mixture doesn't blend well.
- Taste to add maple syrup, if you like. Keep in mind that the popsicles will be less sweet once frozen.
- Pour the mixture into popsicle molds, and add popsicle sticks.
- Freeze for at least 6 hours.

You can use packaged frozen cauliflower rice, which are partially cooked already. Do not defrost. You can also steam your own cauliflower.
