  1. Pre-heat the oven to 425°F. Line a baking sheet with parchment paper.
  2. Trim the ends off the brussel sprouts and cut any larger ones in half. Place them into a large bowl.
  3. Add the salt, black pepper, olive oil and 2 tbsp of the maple syrup to the brussel sprouts. Stir and make sure they are evenly coated in the olive oil. Place them onto the baking sheet.
  4. Cut the bacon into bite sized pieces and place them onto the baking sheet mixing them in with the brussel sprouts.
  5. Add the thyme to the baking sheet, scattering them around and tucking them into the brussel sprouts.
  6. Roast in the oven for 15 minutes then stir and roast and additional 10-15 minutes or until the brussel sprouts are fork tender.
  7. Once cooked discard the thyme stems.
  8. Place the brussel sprouts onto a serving platter and drizzle the remaining 1 tbsp of maple syrup over the top. Sprinkle with sea salt flakes if desired.

Notes

Some of the loose leaves may burn but that's ok.
