Maple Butter Pecan Blondies (Vegan)

Ingredients
Maple Butter Pecan Blondies
- 2 cups2 cups2 cups All Purpose Flour, (240 grams)
- .25 tsp.25 tsp.25 tsp Baking Powder

- 1 cup1 cup1 cup Cane Sugar, (200 grams)
- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup

- 16 Tbsp16 Tbsp16 Tbsp Plant-Based Butter, -melted (2 sticks)
- .5 cup.5 cup.5 cup Almond Milk Yogurt, -room temperature (120 grams)(or plant based yogurt of choice)
- .5 Tbsp.5 Tbsp.5 Tbsp Vanilla Extract

- .5 tsp.5 tsp.5 tsp Butter Extract, (see notes below)
- .5 cup.5 cup.5 cup Pecans, -roughly chopped + extra for the tops of the blondies

Maple Glaze
- .33 cup.33 cup.33 cup Powdered Sugar
- 1 tsp1 tsp1 tsp Oat Milk, Organic, -or plant based milk of choice

- 1 tsp1 tsp1 tsp Pure Maple Syrup

- 1 tsp1 tsp1 tsp Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Maple Butter Pecan Blondies
- Measure out the ½ cup of pecans and roughly chop them. Set them aside for later.
- Preheat the oven to 350F and prepare an 8×8 square pan by lining it with parchment paper.
- To a small bowl, add the flour and baking powder, whisk to combine and set aside for later
- To a medium bowl, add the melted butter, sugar and maple syrup. Whisk for 30 seconds to a minute to fully incorporate.
- Add the butter extract, vanilla extract and yogurt to the butter mixture. Whisk until well combined – 30 seconds to 1 minute.
- Add the dry ingredients to the wet ingredients. Whisk just until no more flour can be seen. Add the pecans and fold them in until well incorporated.
- Pour the batter into the prepared pan. Make sure it is spread out evenly. Sprinkle some roughly chopped pecans over the top of the batter.
- Bake the blondies for 25 to 30 minutes or until lightly browned and a toothpick inserted comes out clean.
- Once out of the oven, place the pan on a cooling rack and let the blondies cool completely in the pan.
- Maple Glaze
- Add the powdered sugar, vanilla extract, milk, and maple syrup to a small container. Stir until fully combined and smooth. Drizzle the glaze over the cooled blondies. The blondies are now ready to be cut and served.
- Store the blondies in an airtight container at room temperature.
Notes
I was using Olivenation Vegan Butter Flavor Extract PG Free, Natural, but I have been having trouble finding it, I don't think they are making it vegan anymore. I have started using Nature's Flavors Butter Flavor Extract - Butter Flavor Extract, Organic – Nature's Flavors.
