Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Pre-heat the oven to 400°F. Add parchment paper to a baking sheet and set aside.
  2. Scrub, peel, and trim the carrot ends. If the carrots are large slice them down the middle lengthwise so they are more uniform with the other carrots for even roasting.
  3. Place the carrots on the baking sheet and top with the olive oil, salt, pepper, 2 tbsp of maple syrup and 1/4 tsp of fresh thyme.
  4. Mix it all together ensuring the carrots are evenly coated.
  5. Roast for 15 minutes then flip the carrots, they may start to char a bit and that's ok.
  6. Continue to cook another 15-20 minutes or until fork tender.
  7. Place on a platter, drizzle the remaining 1 tbsp of maple syrup over the top and sprinkle with 1/2 tsp of the fresh thyme.

Notes

Try to make sure the carrots are evenly sized in thickness so they cook evenly. Carrots can be left unpeeled.
