Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Pre-heat the oven to 400°F. Add parchment paper to a baking sheet and set aside.
- Scrub, peel, and trim the carrot ends. If the carrots are large slice them down the middle lengthwise so they are more uniform with the other carrots for even roasting.
- Place the carrots on the baking sheet and top with the olive oil, salt, pepper, 2 tbsp of maple syrup and 1/4 tsp of fresh thyme.
- Mix it all together ensuring the carrots are evenly coated.
- Roast for 15 minutes then flip the carrots, they may start to char a bit and that's ok.
- Continue to cook another 15-20 minutes or until fork tender.
- Place on a platter, drizzle the remaining 1 tbsp of maple syrup over the top and sprinkle with 1/2 tsp of the fresh thyme.
Notes
Try to make sure the carrots are evenly sized in thickness so they cook evenly. Carrots can be left unpeeled.
