Mini Lemon Poppy Seed Donuts
Bright, lemony and oh so delicious! The classic combo of lemon and poppyseed all baked up in a mini donut so perfect for snacking, a buffet table or even a fun addition to a sack lunch. I use lemon essential oil here to really amp up the lemon flavor but you can sub lemon extract as needed. I've been using my Baby Cakes Donut Makerfor almost a decade and really love it so much! Any mini donut try can also be used in your oven as well.
Ingredients
- 1 cup1 cup1 cup Cassava Flour, Otto’s
- 1 tsp1 tsp1 tsp Baking Powder
- .25 tsp.25 tsp.25 tsp Salt, Redmond Real
- 2 Tbsp2 Tbsp2 Tbsp Poppy Seeds
- 1 whole1 whole1 whole Lemon zest, optional
- 2 Tbsp2 Tbsp2 Tbsp Organic Maple Sugar - Primal Palate, can sub granulated sugar
- .25 cup.25 cup.25 cup Ghee, can sub butter or coconut oil as needed
- .25 cup.25 cup.25 cup Maple Syrup, Pure
- .75 cup.75 cup.75 cup Barista Almond & Oat Milk - Three Trees, can sub milk of choice
- 1 whole1 whole1 whole Egg, room temperature
- 10-12 pinch10-12 pinch10-12 pinch Lemon, drops of lemon essential oil, can sub lemon extract as needed
- 1 cup1 cup1 cup Powdered Sugar, organic
- 1 whole1 whole1 whole Lemon, juice of one
- .5 tsp.5 tsp.5 tsp Lemon zest

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Sift together flour, baking powder, salt, poppy seeds and zest.
- In a separate bowl beat the maple sugar and ghee until fluffy.
- Add syrup, milk, egg and lemon oil to the ghee mixture and beat until well combined.
- Combine dry ingredients with wet and beat again until well combined. Batter will thicken up as it sets.
- Use a plastic bag with the tip cut off to pipe batter or you can also use a pastry bag with a large tip, whichever method, fill with batter and prep your donut maker or donut pan and bake according to manufacturers instructions. My Babycakes donut maker usually takes 4-5 minutes, if using a donut tray in your oven, follow manufacturer directions and extend bake time.
- Once donuts are cooled, stir together all glaze ingredients in a small bowl until well combined. You want a smooth and pretty fluid consistency so that you can dip the top of the donut in it and then it will slowly drip slowly down the sides. Add additional poppy seeds or lemon zest to garnish if desire.
- Allow glaze to set and serve!
