  1. Salmon:
  2. Prepare the Marinade:
  3. In a bowl, whisk together the, olive oil, coconut aminos, miso paste, coconut sugar, ginger, S & P, and garlic until smooth.
  4. Add the salmon pieces to the bowl and gently toss to coat them evenly with the marinade. Cover and refrigerate for at least 15-30 minutes to allow the flavors to marinate
  5. Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the marinated salmon bites in a single layer in the basket, ensuring they are not overcrowded. You may need to cook them in batches depending on the size of your air fryer.
  6. Cook the salmon bites at 400°F (200°C) for 7-10 minutes, shaking the basket halfway through to ensure even cooking. The salmon should be crispy on the outside and tender inside.
  7. Dressing:
  8. Add the cashew butter, miso paste, rice vinegar, lemon juice, maple syrup, coconut aminos, and garlic to a blender or food processor.
  9. Add Water:Pour in 1/2 cup of water and blend until smooth and creamy. If the dressing is too thick, add more water a tablespoon at a time until you reach your desired consistency.
  10. Season: Taste and adjust seasoning with salt and pepper if needed.
  11. Serve or Store:Use the dressing immediately, or store it in an airtight container in the refrigerator for up to a week.
