Miso Brown Butter & Dark Chocolate Chunk Oatmeal Cookies (Gluten-Free)
Imo, oatmeal cookies get a bad rap. There’s a connotation that oatmeal cookies are the favorite of grandmas everywhere, and that they’re boring or always full of raisins.
Well, these cookies will absolutely change your mind and blow your cookie-spectations out of the water! And despite all the different tastes and flavors, the recipe is fairly simple!
These cookies are warm, gooey, nutty, and just a little cinnamon-y. They will make you feel so cozy and make your house smell amazing! 🥰
Ingredients
Miso Brown Butter
- 1 cup1 cup1 cup Butter, Unsalted
- 2 Tbsp2 Tbsp2 Tbsp White Miso Paste
Cookies
- 0.75 cup0.75 cup0.75 cup Brown Sugar, packed
- 0.5 cup0.5 cup0.5 cup Cane Sugar
- 1 tsp1 tsp1 tsp Baking Soda
- 1 tsp1 tsp1 tsp Baking Powder
- 1 cup1 cup1 cup Brown Butter, (use the miso brown butter from above)
- 1 tsp1 tsp1 tsp Cinnamon, Ground
- 1.5 tsp1.5 tsp1.5 tsp Vanilla Paste
- 2 whole2 whole2 whole Eggs
- 3 cups3 cups3 cups Gluten Free Rolled Oats
- 1.5 cups1.5 cups1.5 cups Gluten Free Flour
- 1 tsp1 tsp1 tsp Xanthan Gum
- 1 cup1 cup1 cup Dark Chocolate, chunks
- 0.5 cup0.5 cup0.5 cup Coconut Flakes, unsweetened
- 1 tsp1 tsp1 tsp Maldon Sea Salt Flakes

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- For Miso Brown Butter: Melt butter on Med-Low and let brown in pot for about 7-9 mins (until the butter is a nice golden brown/amber color), stirring occasionally to prevent burning. Remove from heat and stir in miso until it is broken up into smaller bits. Set aside at room temp.
- For Cookies:
- Preheat oven to 350 F
- Combine brown sugar, sugar, baking soda, baking powder, miso brown butter, cinnamon, vanilla paste and eggs.
- Add in GF oats, then GF flour.
- Add dark chocolate chunks and coconut flakes to taste.
- Scoop into small bowls and place on a lined baking sheet.
- Bake at 350 F for 10-13 mins.
- When done, let rest and sprinkle with flaky salt to taste.
- Enjoy!
Notes
Verify that your miso paste is GF, as not all are. Also confirm that your oats are celiac-safe (Bob's Red Mill is a good choice, as well as GFCO oats).
