Ingredients

  • bag (250g) vegan chocolate chipsbag (250g) vegan chocolate chips
  • 1 Tbsp Coconut Oil
  • 3 cups Mini Marshmallows, vegan or non-vegan
  • 3 cups Graham Crackers, approx 14 crackersgluten-free vegan, roughly chopped into pieces
  • 1 tsp Sea Salt, coarse
  • 1 Tbsp Graham Crackers, optional: addition and salt for sprinkling on top

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Prepare an 8x8-inch pan with parchment paper and non-stick baking spray.
  2. In a large microwave-safe bowl, combine the chocolate chips and coconut oil.
  3. Heat in 30-second intervals, stirring after each interval, until fully melted and smooth. Allow to cool for 1 minute.
  4. Add in the mini marshmallows, chopped graham crackers, and salt (if using) and gently fold together.
  5. Pour the s'mores mixture into the prepared pan and firmly press down.
  6. Top with additional graham cracker pieces and/or crumbs and coarse sea salt if desired.
  7. Place in the refrigerator and allow to chill until set. Slice and enjoy!
  8. Store leftovers in an airtight container in the fridge for up to 2 weeks or frozen for up to 6 months.
