Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. While pasta water is coming to a boil, melt plant butter in large, deep-sided nonstick skillet over medium heat.
  2. Cook your desired shape of pasta to 1 minute shy of al dente (make sure to salt the pasta cooking water).
  3. Add zucchini, garlic, salt, lemon juice and olive oil to food processor; purée until smooth (there will be small flecks of green zucchini skin). Add this mixture to melted plant butter; stir. Continue stirring occasionally as pasta cooks.
  4. Add 1.5 cups reserved pasta cooking water to zucchini mixture; stir to combine. Reduce heat to low.
  5. Add drained pasta; stir to fully coat pasta in sauce. Serves 6 as a main meal.

Notes

Can easily make gluten-free by substituting your preferred gluten-free pasta. Reheats well as leftovers. Vegan. Vegetarian. Plant-based. Dairy-free. Egg-free. Nut-free, Sesame-free.
