No Seafood Scampi Pasta
Ready in under 25 minutes, this flavorful, plant-based pasta dish uses Primal Palate’s Seafood Seasoning to create a dreamy, seafood-free scampi sauce. The perfect bowl of delicious weeknight comfort that’s so easy to make. The kiddos will love this one too.
Ingredients
- 1 lb1 lb1 lb Pasta, Your desired shape (I used Fideo Cut Spaghetti)
- 1.5 cups1.5 cups1.5 cups Pasta Water, Reserve 1.5 cups pasta cooking water before draining pasta
- 6 Tbsp6 Tbsp6 Tbsp Plant Based Butter
- 1.5 whole1.5 whole1.5 whole Zucchini, Medium size; sliced into 1-inch pieces
- 2 cloves2 cloves2 cloves Garlic, Peeled and roughly chopped (use large cloves)
- 1 tsp1 tsp1 tsp Kosher Salt
- 0.25 cup0.25 cup0.25 cup Lemon Juice, Freshly squeezed
- 3 Tbsp3 Tbsp3 Tbsp Extra Virgin Olive Oil
- 1 tsp1 tsp1 tsp Seafood Seasoning - Primal Palate

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- While pasta water is coming to a boil, melt plant butter in large, deep-sided nonstick skillet over medium heat.
- Cook your desired shape of pasta to 1 minute shy of al dente (make sure to salt the pasta cooking water).
- Add zucchini, garlic, salt, lemon juice and olive oil to food processor; purée until smooth (there will be small flecks of green zucchini skin). Add this mixture to melted plant butter; stir. Continue stirring occasionally as pasta cooks.
- Add 1.5 cups reserved pasta cooking water to zucchini mixture; stir to combine. Reduce heat to low.
- Add drained pasta; stir to fully coat pasta in sauce. Serves 6 as a main meal.
Notes
Can easily make gluten-free by substituting your preferred gluten-free pasta. Reheats well as leftovers. Vegan. Vegetarian. Plant-based. Dairy-free. Egg-free. Nut-free, Sesame-free.
