Non-Dairy Mocha Pudding
A totally vegan mocha pudding made with AVOCADOS! It's amazing.
Ingredients
- 1 cup1 cup1 cup Soy Milk, Vanilla (or non-dairy nut milk)
- .75 cup.75 cup.75 cup Brown Sugar
- 1 Tbsp1 Tbsp1 Tbsp Instant Coffee
- 2.52.52.5 Avocado, ripe
- 1 cup1 cup1 cup Cocoa Powder, unsweetened
- 1 tsp1 tsp1 tsp Coffee Liqueur

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium saucepan, add the soy milk, sugar and instant coffee.
- Over a medium-low heat, dissolve the coffee and sugar.
- Set the coffee mixture aside and allow to cool.
- Remove skin and pit from the avocado and place in a food processor with the cooled coffee mixture, cocoa powder and coffee liqueur.
- Place in the fridge and once it's chilled it is ready to serve.
