My husband is not a big fan of soup. But, he really loves this one. It is simple but has great flavor and loaded with nutrients. Enjoy

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a Dutch oven cook the beef in oil on medium heat until done. Break up as it cooks. This should take 8-10 minutes.
  2. Add vegetables, salt, pepper, and parsley. Stir and cook for 5 minutes.
  3. Add tomato sauce, broth, and mustard. Stir and cook for 15 minutes on medium low.
  4. Check to ensure potatoes and carrots are soft. If not cook for another 5 minutes. Exact time will depend on how large you cut the vegetables.
  5. Top with bacon and scallions.

Notes

You can also top with graded cheddar cheese if you like to make it more of a cheeseburger flavor.
