Paleo Linguine With Steamed Lemon Clams
Growing up, my dad would make linguine with clams weekly during the summer! So when Jovial Foods introduced their new cassava pasta, I knew I had to recreate my favorite meal!
Ingredients
- 111 Cassava Pasta, packaged (Cassava Spaghetti)
- 242424 Clams, (two dozen) little neck
- 4 cloves4 cloves4 cloves Garlic, minced
- 111 Onion, diced
- .75 cup.75 cup.75 cup Chicken Bone Broth, or water
- 1 Tbsp1 Tbsp1 Tbsp Ghee
- 1 tsp1 tsp1 tsp Lemon Juice
- Parsley, chopped
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large pot, bring water to a boil and cook @jovialfoods cassava spaghetti for 11 minutes!
- While the pasta is cooking, heat a large pot/pan over medium-high and add cooking oil and saute garlic & onion for about 5 minutes.
- Add the broth / water and lower the heat to simmer for 3-5 minutes
- Add the clams to the pot. Cover and turn the best to medium-high. Cook for 6 minutes.
- Add the ghee, lemon juice and parsley (discard any clams that didn't open).
- Add spaghetti to large bowls and top with clams and spoonfuls of the liquid!
- Enjoy!
