Paleo/ Whole 30 Zucchini Falafel
These falafels are nutrient-dense, protein-packed, and perfect for meal prep! 🙌🏼
Ingredients
- 2 whole2 whole2 whole Zucchini, medium, grated
- .5 tsp.5 tsp.5 tsp Salt
- .5 cup.5 cup.5 cup Almond Flour
- .25 cup.25 cup.25 cup Parsley
- 2 cloves2 cloves2 cloves Garlic
- .5 cup.5 cup.5 cup Onion
- 1 tsp1 tsp1 tsp Cumin, Ground
- 1 tsp1 tsp1 tsp Coriander, Ground
- .5 tsp.5 tsp.5 tsp Paprika
- 1 whole1 whole1 whole Egg
- 1 cup1 cup1 cup Italian Nut Crumbs - Nut Crumbs, for rolling the falafel
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Grate the zucchini and place it in a clean kitchen towel or cheesecloth. Sprinkle with ½ tsp salt and let it sit for 10 minutes to draw out moisture.
- Squeeze out as much liquid as possible. The drier, the better for crispier falafel.
- Mix Ingredients:
- In a large bowl, combine the drained zucchini, almond flour, parsley, garlic, onion, cumin, coriander, paprika, egg, salt, and pepper.
- Mix until a sticky dough forms. If it’s too wet, add 1-2 tbsp more almond flour.
- Scoop about 1 tablespoon of the mixture and roll into small balls and roll into the nut crumbs for crunchy coating
- Bake:
- Preheat oven to 350F and line a baking sheet with parchment paper.
- Lightly brush or spray with oil.
- Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
- Air Fry:
- Preheat air fryer to 375°F (190°C).
- Air fry for 12-15 minutes, shaking halfway through.
Notes
🥗 Serving Suggestions: Serve with tahini sauce, Whole30-approved tzatziki, or a side of fresh cucumber salad. Enjoy over a bed of greens or wrapped in lettuce leaves for a light, refreshing meal!
