Panzanella “slider” Inspired Salad
Panzanella, but make it “slider” inspired and use my HOMEMADE CROUTONS for a super speedy side dish! It pairs so well with any time you’re grilling, attending a neighborhood gathering or you simply want a tasty side dish to compliment that summer meal.
Ingredients
dressing
- .25 cup.25 cup.25 cup Avocado Oil Mayonnaise

- .25 cup.25 cup.25 cup Olive Oil

- 2 Tbsp2 Tbsp2 Tbsp Peperoncini Juice, from jar of peperoncini peppers
- 1 - 2 tsp1 - 2 tsp1 - 2 tsp Oregano, Fresh, finely diced

- .75 - 1 tsp.75 - 1 tsp.75 - 1 tsp Real Salt - Redmond

- .25 tsp.25 tsp.25 tsp Black Pepper

salad
- 3 - 4 cups3 - 4 cups3 - 4 cups Homemade Croutons (click for recipe)
- 4 - 6 oz4 - 6 oz4 - 6 oz Tomato, Grape, cut in half or bite sized pieces
- 3 - 4 oz3 - 4 oz3 - 4 oz Deli Ham, sliced into thin strips
- 3 - 4 oz3 - 4 oz3 - 4 oz Pepperoni, sliced into thin strips
- .5 cup.5 cup.5 cup Peperoncini Peppers, sliced into thin strips

- .25 - .5 cup.25 - .5 cup.25 - .5 cup Red Onion, thinly sliced
- .25 cup.25 cup.25 cup Black Olives, sliced

- 2 oz2 oz2 oz Provolone Cheese, slices, cut into thin strips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add all dressing ingredients to a small jar, secure the lid and shake vigorously to combine and emulsify. Taste and adjust seasoning as needed, reshake and set aside.
- Add the salad ingredients to a large mixing bowl, drizzle about ¾ of the dressing over the salad and toss to coat and combine. Taste and adjust with more dressing as needed.
- Place in a serving bowl and serve with the extra dressing on the side if desired.
