Pasta Al Limone
This pasta al limone is such a fresh, light, yet filling pasta that is perfect for summer! It's a light sauce made with fresh peas, spinach, the juice and zest from two lemons, vegan heavy cream, and fresh parsley. I cannot get enough of this pasta and know you will love it too!

Ingredients
- 250 grams250 grams250 grams Fettuccine, or pasta of choice
- 2 Tbsp2 Tbsp2 Tbsp Olive Oil, Lemon, or regular olive oil
- 2 Tbsp2 Tbsp2 Tbsp Vegan Buttery Spread
- 2 whole2 whole2 whole Lemon, juiced and zested

- 1 clove1 clove1 clove Garlic, minced or chopped

- 0.5 cup0.5 cup0.5 cup Peas, Green, fresh or frozen
- 0.25 cup0.25 cup0.25 cup Coconut Cream, or any vegan heavy cream

- 0.333 cup0.333 cup0.333 cup Pasta Water
- 1 cup1 cup1 cup Spinach, I used fresh spinach that I froze
- 1 pinch1 pinch1 pinch Parsley, fresh, to top

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- To a medium-sized pan, add your lemon infused olive oil and butter on medium heat. Allow the butter to fully melt.
- Add minced garlic and peas, then close the lid on the pan to allow the steam to cook the peas.
- Add the vegan heavy cream and stir everything together until combined and it becomes thick.
- In a separate pot, begin to cook your pasta as directed on packaging. Drain and set aside.
- When the pasta is almost fully cooked, add in the spinach to your pan with the sauce, lemon juice and pasta water and stir together until well combined.
- Add cooked pasta to the sauce pan and mix well. Top with lemon zest and fresh parsley.
- Add extra fresh parsley, lemon zest, and a drizzle of the lemon infused olive oil before serving.
Notes
How to store: Place any remaining pasta in an airtight container and store in the fridge for up to 4-5 days.
