Peaches & Cream Overnight Oats
These Peaches & Cream Overnight Oats are tangy, creamy, and bursting with fresh peachy flavor! I love making this when I have a few overripe and juicy peaches. Making the peach “milk” is key for the best flavor in every bite. Try this easy, healthy, and refreshing breakfast that is perfect for summer!
Ingredients
- 2 cups2 cups2 cups Peaches, fresh, chopped (or use frozen and thaw), plus more for serving
- 0.25 cup0.25 cup0.25 cup Almond Milk, or milk of choice
- 0.25 cup0.25 cup0.25 cup Almond Milk Yogurt, or yogurt of choice, plus more for serving
- 1 Tbsp1 Tbsp1 Tbsp Pure Maple Syrup, or sweetener of choice
- 1 tsp1 tsp1 tsp Vanilla Extract
- 1 cup1 cup1 cup Rolled Oats
- 1 Tbsp1 Tbsp1 Tbsp Chia Seeds

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add all ingredients except oats and chia seeds to a blender and blend until smooth.
- Add oats and chia seeds to a medium mixing bowl and pour in the peach "milk." Stir until well combined. Let sit for 5 minutes and stir again.
- Transfer into two jars or small bowls. Cover and refrigerate overnight or at least 4 hours.
- Add more chopped peaches and yogurt for serving and enjoy!
Notes
You can also add a scoop of protein powder with the other ingredients in the blender, and reduce or omit the sweetener. Keeps in the fridge for up to 5 days.
