Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a medium bowl, mix together the peanut butter, date syrup, coconut flour, and vanilla extract until a sticky, but moldable dough forms.
  2. Pop the peanut butter mixture into the fridge to chill for 20-25 minutes.
  3. While the peanut butter mixture chills, heat the chocolate chips and coconut oil in a small saucepan until melted.
  4. Grab a cooking sheet and line with parchment paper.
  5. Remove the mixture from the fridge and roll into even 1 inch balls. Dip each ball halfway in the chocolate mixture and place on lined cookie sheet. Add sprinkles the top then allow the buckeyes to harden before serving.
