Pecan Butter Cookies (Paleo)
I love nut butters so I was excited to try pecan butter. After living in the south for many years I thought this was a fun way to get the southern pecan flavors I so often enjoyed.
Ingredients
- 1 cup1 cup1 cup Pecan Butter
- .5 cup.5 cup.5 cup Almond Flour
- .75 cup.75 cup.75 cup Coconut Sugar
- 1 whole1 whole1 whole Egg, Large, Room temp
- 1 tsp1 tsp1 tsp Baking Soda
- .5 tsp.5 tsp.5 tsp Ground Cinnamon
- 1.5 tsp1.5 tsp1.5 tsp Pure Vanilla Extract
- .25 tsp.25 tsp.25 tsp Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a bowl mix all the ingredients together stir until smooth.
- Chill for 10-15 minutes.
- Heat oven to 350 degrees and put a piece of parchment paper on a cookie sheet, use two cookie sheets.
- Use small ice cream scoop to measure out each cookie, put 6 -7 on a cookie sheet, leaving plenty of room for them to spread out.
- Bake for 11-12 minutes, let chill on the pan for 10 minutes before moving.
Notes
You can roll them in cinnamon sugar for added sweetness and crunch if you wish. You can add chocolate chips or bits of chopped pecans for more texture and pecan flavor.
