Pecan Pie Truffles
Pecan Pie but made into Truffles! These pecan pie truffles are my take on the classic pecan pie but 100x easier. They're refined sugar-free (sweetened with dates) and coated in 100% dark chocolate. If you're a lover of pecan pie, then you have to make these pecan pie truffles. Store them in your freezer for that late-night snacking!
Ingredients
- 1 cup1 cup1 cup Medjool Dates
- 1 Tbsp1 Tbsp1 Tbsp Coconut Oil
- 1 tsp1 tsp1 tsp Pure Maple Syrup
- 2 Tbsp2 Tbsp2 Tbsp Almond Flour
- 2 cup2 cup2 cup Sweet & Salty Pecans (Evie's Snacks)
- 1.4 tsp1.4 tsp1.4 tsp Sea Salt
- 1 cup1 cup1 cup Hu Dark Chocolate Gems, 100% Dark Chocolate

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Blend the dates, coconut oil, maple syrup, and salt in a food process until the dates form a thick dough.
- Add the chopped pecans and process again.
- Scrap down the sides and then add the almond flour.
- Take about 1 tablespoon of the dough and roll it into balls.
- Melt chocolate. Dip the pecan pie balls into the chocolate.
- Sprinkle flaked sea salt on top and place in freezer until chocolate sets and is hard.
