Pecan cookie crumble caramelized apple layer cake with a whipped cinnamon cream cheese frosting!! I mean...can you think of anything better for a Fall birthday?? I can't, which is why I made this for my birthday one year! The textures, the flavors, it was alllll epic and we had no problem polishing off every last bite. A mouthful to say, but so easy to make and assemble!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Put a large bowl in the freezer so it's cold enough to whip your frosting later.
  2. Preheat oven to 325˚F.
  3. Add 1 Tbsp Primal Palate Apple Pie Spice to the Simple Mills vanilla cake mix, and otherwise make the cake batter according to the package instructions (with the right amount of eggs, oil, water, vanilla, etc).
  4. Divide the cake batter into 3 equal portions (about 7oz each) and pour batter into 3 small cake tins.
  5. Bake for 20-23 minutes, or until a toothpick inserted in the middle comes out clean.
  6. While the cake bakes, thinly slice a large honeycrisp apple and add it to a pan on medium heat with the butter, sugar, vanilla, apple pie spice, and pinch salt.
  7. Cook, stirring gently, until the apples are browned and soft, about 10-12 minutes.
  8. Crush the entire package of the Simple Mills pecan cookies and set aside.
  9. While the cake cools, make the frosting by combining all frosting ingredients in a chilled bowl and whipping with a hand mixture until stiff peaks form.
  10. After cake cooks, slice the dome off each later of cake so it'll stack evenly.
  11. Layer: Cake, frosting, crushed cookies, caramelized apple, frosting, cake.
  12. Repeat for another layer, then frost the outside of the cake and decorate with more caramelized apple slices, the rest of your crushed cookies, and rainbow sprinkles.
