Pickled Daikon & Carrot Salad
I love an easy side salad or healthy snack to keep on hand. This fermented salad couldn't get any easier and is great for your digestive system. Using the daikon radish gives it an Asian flare. Sadly, daikon is an underutilized vegetable in America. Technically a cruciferous vegetable it has a peppery flavor. It comes from Southeast Asia and today you can find it in most grocery stores. But if you can't then go to an Asian market, be sure to shop around for other amazing goodies while you are there. Or, you can use any radish you enjoy.

- Cut up vegetables and place into a glass bowl.
- Add vinegar, water, honey, and salt, stir well.
- Refrigerate for at least 3 hours, overnight is best.
