Pinto Bean Pozole
This 3-ingredient dinner is so simple, yet one of the most flavorful dishes you can put on the dinner table. The magic is from using one of the Pozole Bombs from EZ Bombs. Aside from that, you just need hominy, pinto beans and some water ... plus a little time. As a bonus, your house will smell incredible, too!
This vegan/vegetarian version of pozole can be served with tortilla chips for scooping, along with a variety of fresh veggies and toppings. I like sliced avocado to balance out the spice, along with crunchy red onion and fresh cilantro. Cotija cheese would also be a delicious addition.
Ingredients
- 1 lb1 lb1 lb Dry Pinto Beans
- 25 oz25 oz25 oz Hominy
- 111 Pozole Bomb - EZ Bombs
- Red Onion, thinly sliced
- Cilantro
- Avocado, sliced
- Corn Tortilla Chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Sort and rinse 1 pound of dried pinto beans. Add to a large pot with 6 cups water and soak for 8 hours, up to overnight. Drain and rinse.
- Drain and rinse 1 25-oz. can of hominy. Add the soaked beans, hominy and 6 cups of fresh water back to the pot. Drop in a Pozole Bomb and bring to a boil. Once boiling, reduce heat to a simmer and cover with a lid. Cook for 90 minutes, stirring every 20 minutes or so.
- Scoop into a bowl and serve with sliced red onion, cilantro leaves, sliced avocado and a side of corn tortilla chips.
