Pistachio Cream Protein Bark

Ingredients
- 1 cup1 cup1 cup Cottage Cheese, Low-Fat
- 0.5 cup0.5 cup0.5 cup Vanilla Protein Powder, see description for my faves
- 0.333 cup0.333 cup0.333 cup Pistachios, Roasted, + 1-2 tbs optional topping
- 0.25 cup0.25 cup0.25 cup Coconut Flour
- 0.5 tsp0.5 tsp0.5 tsp Vanilla Extract
- 0.5 cup0.5 cup0.5 cup 55% Cacao Organic Vegan Semi-Sweet Dark Chocolate Chips - Pascha Chocolate Co., melted
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Blend cottage cheese, pistachios, and vanilla until smooth (it will take a bit, but be patient - it will blend!)
- Add to a bowl with protein powder and coconut flour.
- Stir until combined and spread on a small baking sheet lined with parchment paper.
- Put in freezer while you melt your chocolate. Once your chocolate is melted, pour and spread over the pistachio mixture.
- You can add 1-2 tbs pistachios on top but that’s optional.
- Put back in freezer and freeze for at least 2 hours before breaking apart. Store in freezer.
