Pomegranate Feta Eggs With Spiced Olives
These pomegranate feta eggs are so bright and fresh-the perfect way to start your day! It is high in protein and is simple to make.
Ingredients
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil

- 2 cloves2 cloves2 cloves Garlic, chopped

- 1 tsp1 tsp1 tsp Oregano, Dried

- 1 tsp1 tsp1 tsp Thyme, Dried

- 1 tsp1 tsp1 tsp Cumin, Ground

- 1 tsp1 tsp1 tsp Sesame Seeds
- 4 whole4 whole4 whole Kalamata Olives, chopped
- .25 tsp.25 tsp.25 tsp Salt

- 1 cup1 cup1 cup Pomegranate, seeds
- .25 cup.25 cup.25 cup Feta Cheese
- 2 whole2 whole2 whole Eggs, pasture-raised

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a pan over medium heat, add oil and spices. Mix and cook for a minute
- Add garlic, cook another minute
- Add olives and salt, cook for a minute. Then pour in a small bowl
- Add pomegranate seeds into the same pan, cook for 3 minutes
- Make 2 openings, place crumbled feta on the rim of the openings. Use extra to place spread on pomegranate seeds or on eggs
- Crack eggs into openings
- Cover and cook for 4 minutes, more or less depending on how done you like them
- Remove from heat and top with olive mixture
- Enjoy the pop of flavor!
