Pulled Beef (Paleo)
I love using the InstantPot, it makes things easy and doesn’t heat up the entire house. The end result is just amazing and super versatile.
Ingredients
- 3.5 lb3.5 lb3.5 lb Beef Chuck Roast, Cut in half
- 1 Tbsp1 Tbsp1 Tbsp Olive Oil
- 2 tsp2 tsp2 tsp Sea Salt
- 1 tsp1 tsp1 tsp Black Pepper
- 1 tsp1 tsp1 tsp Chili Powder
- 1.5 whole1.5 whole1.5 whole Yellow Onion, Chopped
- 4 cloves4 cloves4 cloves Garlic, Chopped
- .5 cup.5 cup.5 cup Cabernet Sauvignon Red wine
- 1 cup1 cup1 cup Beef Broth

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat InstantPot on Sauté setting and add oil.
- Sprinkle roast with salt, pepper, and chili powder.
- Cook roast for 3-4 minutes on each side, you want a nice brown sear on each side.
- Add onions, garlic, and red wine. Turn setting to Slow Cook. Cook for 2 minutes.
- Add broth and stir.
- Cook for 6 hours, turn roast half way through.
- When done remove roast and shred using two large forks.
Notes
This beef is delicious as it is, or you can use in tacos, burritos, eggs, or sandwiches.
