Pumpkin Marshmallow Protein Bars
These homemade protein bars combine a pumpkin pie perfect bar style cookie dough base, and a gooey squishy marshmallow topping. Wrap it all in rich sea salted dark chocolate and you get pure bliss with every bite!
Ingredients
- 0.5 cup0.5 cup0.5 cup Pumpkin Purée
- .5 cup.5 cup.5 cup Almond Butter

- 0.75 cup0.75 cup0.75 cup Vanilla Protein Powder

- 3 - 5 Tbsp3 - 5 Tbsp3 - 5 Tbsp Coconut Flour, *

- 1 tsp1 tsp1 tsp Pumpkin Pie Spice - Primal Palate

- .5 tsp.5 tsp.5 tsp Pure Vanilla Extract

- 1 Tbsp1 Tbsp1 Tbsp Pure Maple Syrup
- 0.75 cup0.75 cup0.75 cup Milk, Fairlife for high protein, or sub dairy free milk or choice

- 2 Tbsp2 Tbsp2 Tbsp Grass-Fed Gelatin

- .5 cup.5 cup.5 cup Vanilla Protein Powder

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Honey

- .5 tsp.5 tsp.5 tsp Pure Vanilla Extract

- 1 cup1 cup1 cup Dark Chocolate

- 1 Tbsp1 Tbsp1 Tbsp Coconut Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Make pumpkin base first
- Mix together pumpkin purée, almond butter, vanilla protein powder, 2 tbsp coconut flour, pumpkin pie spice, and vanilla extract together until smooth
- Your dough will be slightly wet until refrigerated, however if it feels too sticky to work with add 1-2 tbsp more coconut flour (this will depend how runny your almond butter is)
- Spread into loaf tin lined with parchment paper and place in the fridge
- Make marshmallow topping by whisking milk & gelatin and sweetener (if using) together in a small sauce pan
- Let sit for a couple minutes until it thickens into a gelatin bloom
- Place over low-med heat and stir until the whole mixture liquifies
- Allow to cool for a few min, then add protein powder and use a hand or stand mixer to mix 5-6 minutes until gooey
- Pour overtop pumpkin base, and refrigerate another 10-15 minutes
- Slice into 6 bars
- Melt chocolate in 30 second intervals with a pinch of coconut oil
- Dip bars one by one into melts chocolate, then onto parchment paper, and back to the fridge for 5-10 min until chocolate is firm to the touch
