Not interested in making an entire pumpkin pie? Then try these pumpkin pie crumble bars! With a crust made from oats and a delicious pumpkin filling, these bars are gluten-free, vegan and refined sugar-free.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350 degrees and line a 9x5 loaf pan with parchment paper.
  2. Add oats to a food processor and process to become flour.
  3. Add coconut oil, cinnamon and maple syrup. Pulse to combine.
  4. Reserve 1/3 cup of oat mixture for topping. Set aside.
  5. Press crust mixture into prepared baking pan.
  6. In a bowl, whisk together pumpkin filling ingredients until creamy.
  7. Spread pumpkin mixture over crust.
  8. Sprinkle reserved crust mixture over pumpkin filling.
  9. Bake for 30 minutes.
  10. Let cool completely, before slicing into bars.
