Quick and Easy Chicken Salad
I love chicken salad. There are so many variations out there, but when I am looking for something quick, easy, and delicious, this recipe is my go-to! I love to serve it with sourdough bread (pictured here) or potato chips!
Ingredients
- 1 whole1 whole1 whole Rotisserie Chicken, Shredded
- 1 cup1 cup1 cup Celery, Chopped
- 1 cup1 cup1 cup Grapes, Red, Chopped
- 1 tsp1 tsp1 tsp Paprika
- 1 tsp1 tsp1 tsp Garlic Powder
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Dijon Mustard
- 0.5 cup0.5 cup0.5 cup Mayonnaise - Sir Kensington's Classic

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Shred your rotisserie chicken well with two forks
- Chop celery and grapes; I like my celery chopped very finely
- Add in spices, Dijon, lemon juice, and mayo directly to the veggies and mix
- Add chicken on top of the mayo mixture and incorporate well
- Enjoy!
Notes
For some reason, coating the add ins like celery and grapes with the mayo mixture before adding the chicken brings the flavor to the next level! Try it and let me know what you think!
