Maybe it's just me.. but $7 for a small jar of pickled onions just doesn't sit right with me. Plus, they are TOO easy to make. I like to use this same method with red onions and white onions. They add the perfect crunch to snack plates, sandwiches, salads and bowls. Just 3 ingredients and a couple of hours, and they are done.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Choose the type of jar you are going to use. Make sure it has a lid!
  2. Fill your jar 3/4 full with apple cider vinegar. This leaves room for the onion!
  3. In a small pot, add in your apple cider vinegar and sugar. Bring to a boil.
  4. While you're waiting for your vinegar to boil, slice your red onions thin. Add to jar.
  5. Once your vinegar is boiling, add it to the jar full of onions. Make sure all onions are covered.
  6. Let it cool a bit, add the lid, and place in the fridge.
  7. Let the onions marinate for 6-8 hours, and enjoy!

Notes

You can use white wine vinegar too.
