Quick Pickled Onions
Maybe it's just me.. but $7 for a small jar of pickled onions just doesn't sit right with me. Plus, they are TOO easy to make. I like to use this same method with red onions and white onions. They add the perfect crunch to snack plates, sandwiches, salads and bowls. Just 3 ingredients and a couple of hours, and they are done.

- Choose the type of jar you are going to use. Make sure it has a lid!
- Fill your jar 3/4 full with apple cider vinegar. This leaves room for the onion!
- In a small pot, add in your apple cider vinegar and sugar. Bring to a boil.
- While you're waiting for your vinegar to boil, slice your red onions thin. Add to jar.
- Once your vinegar is boiling, add it to the jar full of onions. Make sure all onions are covered.
- Let it cool a bit, add the lid, and place in the fridge.
- Let the onions marinate for 6-8 hours, and enjoy!
Notes
You can use white wine vinegar too.
