Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Cut radicchio into thin strips. TIP: If you want to make the radicchio slightly less bitter, soak the cut up strips in ice water for 30 minutes, before drying and assembling the salad.
  2. Prepare other ingredients: Cut lettuce into thin strips. Zest one of the oranges (should be about 2 tsp zest) and reserve for the dressing. Peel the oranges and chop the avocado and pistachios.
  3. Assemble the salad: In a large bowl or platter, arrange the radicchio and lettuce, then top with orange segments and avocado. Sprinkle with chopped pistachios and parmesan.
  4. Make the dressing: In a small bowl, combine all ingredients for the dressing and stir to combine, adding salt and pepper to taste.
