Vegan Cinnamon Roll French Toast Roll-Ups

Regular French toast is good, but have you tried rolling it up? It’s so fun to eat it this way. And besides, this is your excuse to fill the middle with the most delectable cinnamon butter. Plus with the icing drizzle on top, these truly are a dream!
Ingredients
- 6 pieces6 pieces6 pieces Bread, soft white bread is best for rolling
- 2 Tbsp2 Tbsp2 Tbsp Vegan Buttery Spread, for frying
- 6 Tbsp6 Tbsp6 Tbsp Vegan Buttery Spread, softened (not melted)
- 3 Tbsp3 Tbsp3 Tbsp Brown Sugar
- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Ground Cinnamon
- 6 Tbsp6 Tbsp6 Tbsp JUST Egg (Plant Based Egg Substitute), (bottled), can sub with 2 eggs but I haven't tried
- 2 Tbsp2 Tbsp2 Tbsp Almond Milk, or milk of choice
- 0.5 tsp0.5 tsp0.5 tsp Ground Cinnamon
- 0.5 tsp0.5 tsp0.5 tsp Vanilla Extract
- 2 Tbsp2 Tbsp2 Tbsp Powdered Sugar
- 1 tsp1 tsp1 tsp Almond Milk, or milk of choice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Roll bread flat with a rolling pin. Carefully cut off crusts.
- Combine all ingredients for the cinnamon butter filling. Stir together until smooth and fully combined. Spread about a tablespoon of filling on each piece of bread.
- Tightly roll up each piece of bread.
- In a shallow wide bowl, whisk together all ingredients for the batter.
- Add vegan buttery spread to a large skillet and turn on the heat to medium.
- While pan is preheating. dip each bread roll-up, one at a time, into the batter for about 10 seconds, coating all sides. Place into the pan.
- Cook for 2-3 minutes on each side until golden brown, until all sides are browned evenly.
- Whisk together powdered sugar and almond milk to make icing.
- Serve French toast roll-ups with icing and any other desired toppings. Enjoy!
