Rainbow Apple Rings
We love eating the rainbow so we decided to put a St. Paddy’s Day spin on our apple slice “donuts”. Topped with Greek yogurt and our rainbow fruit, you can also sub in nut butter or chocolate hummus for the spread. We then added some dye-free candy in the center for our pot of gold at the end of the rainbow.
Ingredients
- 111 Apple, Organic, washed and cored
- 1 cup1 cup1 cup Plain Greek Yogurt, Can also sub with non-dairy yogurt, nut butter, or chocolate hummus
- 0.25 cup0.25 cup0.25 cup Strawberries, washed and sliced
- 111 Tangerines (Mandarin Orange), Peeled
- 111 Banana, sliced
- 0.25 cup0.25 cup0.25 cup Grapes, Green, washed and sliced
- 0.25 cup0.25 cup0.25 cup Blueberries, Washed
- 0.25 cup0.25 cup0.25 cup Grapes, Black Seedless, washed and sliced
- 1 Tbsp1 Tbsp1 Tbsp Chocolate Gems - Unreal, Green only, optional
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Take an apple slice and spread yogurt on top. Decorate with your rainbow fruit and add optional dye-free candy in the center for the pot of gold at the end of the rainbow. Enjoy for breakfast or snack!
