Piars so perfectly with my Salmon Bites but is also the perfect warm weather side dish. You can adjust the kiss of heat to your liking by using more or less of the chili flakes. Am I a bit late to the cucumber game…probably, but happy to be playing now!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Wash cucumbers and pat dry. Use the tines of a fork to score the skin of each cucumber from tip to tip, all the way around, then slice into ¼“ discs. Place discs in a colander and sprinkle with salt, toss and allow to set for 5-10 minutes to draw out excess water.
  2. While cucumbers set, make the dressing by adding all ingredients to a small bowl and whisking well to combine.
  3. Add cucumbers and red onions to a medium sized bowl, pour dressing on top and toss to fully coat and allow to set for 5-10 minutes.
  4. Toss again and place in a serving bowl, garnish with cilantro, chives and sesame seeds.
