Roasted Sweet Potato & Red Pepper Soup with Crispy Chickpeas
A silky roasted sweet potato and sweet red pepper soup packed with warming spices, then loaded with crispy chickpeas, crunchy seeds, fresh parsley, chilli and a generous drizzle of olive oil. Because soup should never be boring.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 200°C fan.
- Add the sweet potato, sweet red peppers, red onion and garlic to a large roasting tray. Drizzle with the olive oil, then add the cumin, smoked sweet paprika, cinnamon, sea salt and cracked black pepper. Toss well to coat. Roast for 30–35 minutes, until the sweet potato is tender and the vegetables are beautifully caramelised around the edges.
- Meanwhile, pat the chickpeas really dry, using kitchen towel and add to a separate baking tray. Toss with olive oil, sea salt and black pepper, then roast for around 20–25 minutes, shaking halfway through, until golden and crispy.
- Transfer the roasted vegetables to a blender with 1 cup of vegetable stock and blend until silky smooth. Add an extra splash of stock if you prefer a thinner consistency, then taste and adjust the seasoning.
- Pour into bowls and top generously with crispy chickpeas, mixed seeds, chilli flakes and fresh parsley. Finish with a good drizzle of extra virgin olive oil and serve with plenty of toasted sourdough for dunking.
Notes
Tip: Start with less stock and add more as needed — it’s much easier to thin your soup than rescue one that’s gone too watery!
