Greek Pasta Salad with Homemade Vegan Feta
Fresh, colourful and packed with Mediterranean flavours, this Greek-inspired pasta salad is the perfect summer lunch. Homemade vegan feta, crispy roasted chickpeas, juicy tomatoes and crunchy cucumber are tossed with pasta in the creamiest lemon herb dressing. It’s ideal for meal prep, picnics, BBQs or an easy dinner on warm days.

for the salad

- 1 whole1 whole1 whole Lemon, juice of 1/2-1 lemon

- 0.5 whole0.5 whole0.5 whole Lemon Zest, zest of 1/2 lemon
- 1 tsp1 tsp1 tsp Dijon Mustard
- 1 clove1 clove1 clove Garlic, finely grated

- 1 tsp1 tsp1 tsp Oregano, Dried

- 0.5 tsp0.5 tsp0.5 tsp Basil, Dried

- 1 tsp1 tsp1 tsp Pure Maple Syrup

- 1 - 2 tsp1 - 2 tsp1 - 2 tsp Ice Water, (if needed)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Make the vegan feta: Press the tofu well, then tear it into bite-sized pieces. In a bowl, whisk together the lemon juice, apple cider vinegar, olive oil, nutritional yeast, oregano, garlic granules, onion granules, sea salt and black pepper. Gently fold through the tofu until evenly coated. Leave to marinate for at least an hour, or overnight for the best flavour.
- Roast the chickpeas: Preheat the oven to 180°C fan. Pat the chickpeas dry with a clean tea towel or kitchen paper, then toss with the olive oil, sea salt and cracked black pepper. Spread onto a baking tray and roast for 25 minutes, shaking the tray halfway through, until golden and crispy.
- Cook the pasta: Cook the pasta in well-salted boiling water until al dente. Drain and leave to cool for around 10 minutes. It should still be slightly warm when you add the dressing.
- Make the dressing: Whisk together all of the dressing ingredients until smooth and creamy. Taste and adjust the seasoning, adding a little more lemon for brightness or maple syrup if you prefer a touch more sweetness.
- Assemble: In a large bowl, combine the pasta, crispy chickpeas, cucumber, cherry tomatoes, red onion, olives, parsley and basil.Add the homemade vegan feta and pour over the dressing. Toss gently until everything is evenly coated. Finish with plenty of freshly cracked black pepper, an extra squeeze of lemon juice if desired and a few extra herbs to serve.
Notes
- The flavours develop beautifully after 30 minutes in the fridge.
- If making ahead, keep a little dressing aside and stir it through just before serving to freshen the salad.
- The crispy chickpeas are best added just before serving to keep their crunch.
- Delicious for meal prep, summer picnics, BBQs or an easy lunch.
